Cheesy Potatoes
 
Ingredients
  • 2 lb. frozen organic hash browns (shredded potatoes only; no added oil/fat)
  • 2 TBSP butter
  • 8 oz Neufchatel or cream cheese
  • 1 cup Greek Yogurt
  • 1 cup milk
  • 8 oz. shredded Cheddar
  • salt and pepper to taste if desired
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients well and spread into casserole.
  3. Bake uncovered for 1 hour or until bubbly and browned.
