- 2 lb. frozen organic hash browns (shredded potatoes only; no added oil/fat)
- 2 TBSP butter
- 8 oz Neufchatel or cream cheese
- 1 cup Greek Yogurt
- 1 cup milk
- 8 oz. shredded Cheddar
- salt and pepper to taste if desired
- Preheat oven to 350 degrees.
- Mix all ingredients well and spread into casserole.
- Bake uncovered for 1 hour or until bubbly and browned.
