Easy Slow Cooker Salsa Chicken
  • 1 to 1 ½ lbs boneless skinless chicken breast
  • 12 oz salsa of choice (look for a brand with no artificial ingredients and low sugar)
  • ¼ cup water
  • ½ cup canned black beans (low sodium)
  1. Put chicken in slow cooker.
  2. Cover with salsa. Add water and black beans.
  3. Cook on low for 5 hours.
  4. Shred chicken and serve over brown rice. Top with plain Greek yogurt, shredded cheddar cheese, and diced avocados.
