Easy Slow Cooker Salsa Chicken
- 1 to 1 ½ lbs boneless skinless chicken breast
- 12 oz salsa of choice (look for a brand with no artificial ingredients and low sugar)
- ¼ cup water
- ½ cup canned black beans (low sodium)
- Put chicken in slow cooker.
- Cover with salsa. Add water and black beans.
- Cook on low for 5 hours.
- Shred chicken and serve over brown rice. Top with plain Greek yogurt, shredded cheddar cheese, and diced avocados.
