Grandma B's Cucumber Salad
  • 3 medium organic cucumbers, thinly sliced. If you prefer, remove peel in strips leaving some peel intact.
  • ½ tsp sea salt
  • 1 cup Greek yogurt
  • 1 TBSP white vinegar
  • 1 tsp coconut sugar
  • 2 cloves garlic, minced
  1. Place cucumbers in bowl and add enough cool water to cover. Add salt, stir well, and chill in refrigerator, covered, for at least one hour and up to overnight.
  2. Drain water and press cucumber slices to remove excess moisture.
  3. Mix remaining ingredients in a bowl. Add cucumbers and stir well to coat. Serve well chilled.
