Grandma B's Cucumber Salad
- 3 medium organic cucumbers, thinly sliced. If you prefer, remove peel in strips leaving some peel intact.
- ½ tsp sea salt
- 1 cup Greek yogurt
- 1 TBSP white vinegar
- 1 tsp coconut sugar
- 2 cloves garlic, minced
- Place cucumbers in bowl and add enough cool water to cover. Add salt, stir well, and chill in refrigerator, covered, for at least one hour and up to overnight.
- Drain water and press cucumber slices to remove excess moisture.
- Mix remaining ingredients in a bowl. Add cucumbers and stir well to coat. Serve well chilled.
