Mediterranean Seven Layer Dip
  • 1-2 tubs prepared hummus, or 1-2 batches hummus made from scratch (depending on platter size)
  • 1 medium cucumber, peeled if desired and diced
  • 1 medium tomato or 1 pint cherry tomatoes, diced
  • 5 leaves romaine lettuce, finely chopped
  • ½ small red onion
  • ¼ cup pitted kalamata olives, sliced
  • 4 oz feta cheese, crumbled
  1. Spread hummus in even layer over large platter. Sprinkle on all ingredients in order listed. Serve with whole grain tortilla chips.
